Då var det dags för en provsmakning. Salthalten var bra denna gång, har blivit på gränsen till för salt tidigare. Jag blandade lag (halvsats och ca en msk socker, 62 gr salt) enligt bifogad bild och tillsatte lite socker. Ca 3-400 gr kött 1,5 cm skivor. Å det fick ligga i ca 1,5 dygn i kylen. Torkade i pannrummet i torklåda ca 27-35°.
