Lillefars torktråd, Guanciale (fast på fläsk)!!!

Här är mitt försök att grava/torka sidfläsk, ska likna den talienska maträtten Guanciale (Torkad griskind).

Dag 1: 7:e januari.

Vanligt, ljusrosa sidfläsk.

Samma sidfläsk inbäddat i salt, timjan, basilika, oregano, rosmarin, socker, enbär och svartpeppar. Köttet blir mer gravat än saltat.

Nu ska det in en vecka i kylen.

Sen använder man det istället för t.ex bacon. Detta skall altså stekas innan ätning.
